Competing as “The Southern Gentlemen’s Culinary Society” competition barbecue team and opening Whole Hog Café in 2000, the Whole Hog Café founders Ron Blasingame, Mike “Sarge” Davis, and Steve Lucchi long devoted themselves to the pursuit of barbecue perfection.

​

That is why it was an easy decision for our owner David Warren to make the move from Fayetteville in 2009 to open the first Springfield location on W. Sunshine and the second on N. Glenstone in 2014. David’s own pursuit of barbecue perfection is reflected in the wildly popular dishes served in the Whole Hog Café Springfield - Burnt End Cheesy Corn and “The Sarge”, of course named after his dear friend and founder Sarge Davis.

In 2009, David hired Charlie Koelling, a college student, for back of house dish and line cook. Charlie proved to be a loyal and hardworking employee, which is why it was an easy decision to promote Charlie to manager in just a few short months. Four years later, in 2013, Charlie became a business partner in Whole Hog Café Springfield. You'll hear friendly banter between Dave and Charlie in their radio commercials on 104.7TheCave and Q102. David and Charlie continue to carry out the proud tradition of the Whole Hog Café roots, competing in various barbecue competitions around the Ozarks.

For nearly ten years Whole Hog Café Springfield has been smoking consistently perfect meats in the Ozarks. You’ll see Pitmasters David and Charlie in house every day, whether it is on the line, the smoker, or talking to you - They are devoted to bringing you the best Memphis-style barbecue in the area.

"Great BBQ! This is another place we really like to go. The food is wonderful. It does not matter what you order. We normally get the pulled pork sandwich with 2 sides. I always get the potato salad and cheesy corn with burnt ends. My wife gets the baked beans and potato salad. It is unusual if I leave without a pint of potato salad to go. It is always clean and the service is always good."
